01Method
- 1
Warm half the olive oil in a medium pan over medium-high heat and cook the sausage until browned, about 5 to 7 minutes.
- 2
Meanwhile, bring a few inches of water in a large pot to a gentle simmer over medium-high heat.
- 3
Crack each egg separately into a small cup. Stir the simmering water to create a gentle whirlpool, then slide the eggs in one at a time. Poach for 3 minutes, then lift out with a slotted spoon and rest on paper towels to drain.
- 4
While the eggs are poaching, run the sweet potato through a spiralizer to form noodles.
- 5
Heat the remaining olive oil in a large skillet over medium heat. Add the sweet potato noodles and cook until just tender, 5 to 7 minutes. Season with salt and pepper.
- 6
Place the sweet potato noodles in a large bowl, add the drained sausage, and toss everything together with the salsa.
- 7
Divide the mixture between two bowls and top each portion with diced avocado and a poached egg.
