01Method
- 1
Gather and prepare all ingredients before starting.
- 2
Heat an air fryer to 400°F (200°C) for 10 minutes, following the manufacturer's guidance.
- 3
Line the basket with foil, lay the bacon strips in a single layer, and air-fry until crisp, about 8 minutes.
- 4
Transfer the bacon to a paper towel-lined plate. Lower the air fryer temperature to 325°F (165°C). Coat two large ramekins or oven-safe bowls with cooking spray, then press one tortilla into each so the edges flare upward.
- 5
Break 2 eggs into each tortilla shell and scatter cheese over the top. Dust each bowl with a portion of the adobo seasoning and salt.
- 6
Air-fry one tortilla bowl at a time until the tortilla is golden and crisp, the egg whites are fully set, and the yolks remain slightly runny, 13–15 minutes.
- 7
While the tortilla bowls cook, combine the cherry tomatoes, cilantro, scallions, lime juice, and the remaining adobo seasoning and salt in a small bowl and stir well. Crumble the bacon into bite-sized pieces.
- 8
Lift the tortilla bowls out of the ramekins and set them on plates. Spoon the tomato mixture over each bowl and finish with diced avocado and the crumbled bacon.
