01Method
- 1
Assemble all ingredients before starting.
- 2
In a large bowl, whisk the eggs together with the milk and salt. Melt butter in a large skillet over medium-high heat, then pour in the egg mixture. Cook, stirring continuously, until fully set, about 5 minutes.
- 3
Break the scrambled eggs into smaller chunks and transfer to a large bowl; set aside.
- 4
Using the same skillet over medium heat, cook the sausage and garlic together for 5 minutes, then add the red onion and continue cooking until the sausage is crumbled, fully browned, and cooked through. Drain off any excess fat.
- 5
Add the sausage mixture to the bowl with the eggs. Mix in the tomato, cilantro, jalapeños, and taco seasoning until evenly combined. Let the filling cool to room temperature, then fold in the cheddar cheese.
- 6
Place a tortilla flat on a clean surface and spoon a portion of filling onto the lower half, spreading it into a rectangular shape with the back of the spoon. Fold the bottom edge over the filling, tuck in both sides, and roll firmly toward the top to form a tight cylinder. Repeat with all remaining tortillas and filling.
- 7
Wrap each finished burrito snugly in plastic wrap and store in the freezer until needed.
- 8
When ready to eat, microwave individual burritos until heated through, 3 to 4 minutes.
