Add all the oatmeal ingredients to a medium saucepan. Cut any larger pieces of dried fruit (prunes, apricots, etc.) into smaller pieces beforehand. Bring to a boil on the stovetop to soften the dried fruit — or simply pour boiling water straight over the oats. Alternatively, soak the dried fruit in hot water the night before, drain in the morning, then pour fresh hot water over it along with the remaining ingredients and let everything sit for a few minutes to absorb. Once cooked, blend the oatmeal with an immersion blender until smooth — the fruit will naturally sweeten it. If it's not sweet enough for your taste, stir in a little agave or maple syrup to finish.

Toast your choice of nuts or seeds in a dry pan for a few minutes until golden (try almonds, hazelnuts, pumpkin seeds, sunflower seeds, pecans, or walnuts). Pour the oatmeal into a bowl and top with fresh fruit, the toasted nuts or seeds, and sprouts. Drizzle lightly with maple syrup to taste.
