01Method

  1. 1

Heat the oven to 350°F (175°C) and line a rimmed baking sheet with parchment paper.

  2. 2

Whisk together the flour, brown sugar, salt, baking soda, and cinnamon in a large bowl. Pour in the buttermilk and vanilla extract, stirring until a smooth, uniform batter forms. Spread the batter evenly across the prepared baking sheet using a spatula.

  3. 3

Bake until the surface is firm and golden brown, 20 to 25 minutes. Let the slab rest on the pan for 10 minutes, then transfer to a wire rack to cool fully.

  4. 4

Reduce the oven temperature to 275°F (135°C).

  5. 5

Break the cooled slab into rough chunks and pass them through a meat grinder fitted with a coarse blade. Scatter the resulting crumbs across two baking sheets in an even layer.

  6. 6

Return to the oven and bake until thoroughly dry, stirring every 10 minutes, for about 30 minutes total. Once completely cooled, transfer to an airtight container for storage.
