01Method
- 1
Combine the chicken with the chipotle paste and salt in a bowl, tossing until every piece is evenly coated. Leave to sit while you prepare the pan.
- 2
Warm a teaspoon of the oil in a large frying pan over medium-high heat. Once the oil begins to smoke, add the first batch of chicken and sear until golden on each side, roughly 1–2 minutes per side. Transfer to a plate. Add another teaspoon of oil and repeat with the remaining chicken.
- 3
Pour the last teaspoon of oil into the pan, then add the onion and garlic. Cook, stirring, until softened and lightly golden, about 2 minutes. Add the peppers and continue cooking until they are tender and beginning to colour, about 3–5 minutes.
- 4
Return the chicken and any resting juices to the pan. Pour in the broth and simmer until the sauce reduces slightly, the chicken is fully cooked through, and the peppers are soft, about 5–7 minutes. Stir through the oregano, adjust seasoning to taste, and serve straight away in the warmed tortillas with salsa, guacamole, and sour cream as desired.
