01Method

  1. 1

Preheat the oven to 350°F. Coat an 8-inch square oven-safe baking dish with cooking spray.

  2. 2

In a large bowl, stir together the oats and granulated sugar.

  3. 3

Whisk together the milk, egg substitute, and vanilla in a separate bowl until well combined. Pour into the oat mixture and stir to combine, then transfer everything to the prepared baking dish.

  4. 4

Bake for 40 to 45 minutes, until the center is just slightly jiggly. Transfer to a cooling rack.

  5. 5

Scatter the brown sugar evenly over the surface of the baked oatmeal, then use the back of a spoon to press it into a thin, even layer.

  6. 6

Return the dish to the oven and bake for another 2 to 3 minutes, just long enough for the sugar to melt.

  7. 7

Switch the oven to broil. Position the dish about 3 inches from the heat source and broil for 1 to 2 minutes until the sugar bubbles and takes on a light golden-brown color — watch closely to avoid burning and rotate the dish if needed. Scoop into bowls and serve.
