01Method
- 1
Brown the sausage in a large skillet over medium-high heat, breaking it into crumbles as it cooks, about 10 minutes. Remove with a slotted spoon and transfer to a large bowl.
- 2
Lower the heat to medium and pour the beaten eggs into the same skillet. Season with salt and pepper. Let cook for 3 minutes, then stir and continue cooking for another 2 minutes. Turn off the heat, give the eggs one final stir to break up any large pieces, then add them to the bowl with the sausage. Add the cheese and mix everything together.
- 3
Lay a tortilla flat on a clean surface. Spoon some of the filling onto the lower third of the tortilla. Fold the near edge over the filling, tuck in both sides to form an envelope, then roll it up tightly. Place seam-side down on a baking sheet. Repeat with the remaining tortillas and filling.
- 4
Slide the baking sheet into the freezer for 2 hours. Once the burritos are frozen solid, transfer them to a covered freezer-safe container for storage.
- 5
When ready to eat, preheat the air fryer to 200°C (400°F).
- 6
Place a burrito seam-side down in the air fryer basket and cook for 5 minutes until heated through and lightly crisped.
