01Method
- 1
Start with the yeast starter: crumble the fresh yeast into a small bowl, add the sugar, and pour in the milk. Give it a gentle stir, cover with a kitchen towel, and leave in a warm spot until foamy and active.
- 2
Once the starter is bubbly, combine both flours, the starter, sugar, salt, vanilla extract, egg, milk, and grated potato in a large bowl. Mix everything together until well combined.
- 3
Cover the bowl with a kitchen towel and let the batter rise for about 45 minutes, until it has roughly doubled in size.
- 4
Give the risen batter a good stir — it will be thicker than when you started. Heat a little oil in a pan over medium heat and fry the pancakes on both sides until golden brown.
- 5
Serve the pancakes warm with quark, jam, or fresh fruit.
