01Method
- 1
Heat up the waffle iron following the appliance's instructions.
- 2
In a large bowl, combine the whole wheat pastry flour, all-purpose flour, oat flour, sugar, baking powder, and salt by whisking together. In a second bowl, whisk together the egg yolks, milk, canola oil, and vanilla. In a clean non-plastic bowl, use an electric mixer to beat the egg whites until soft peaks form, about 1 to 2 minutes.
- 3
Create a well in the center of the dry mixture and pour in the milk-egg yolk mixture; stir until the batter is smooth. Carefully fold in the beaten egg whites, working to preserve as much volume as possible. Allow the batter to rest for about 5 minutes until it thickens slightly.
- 4
Ladle approximately half a cup of batter onto the preheated waffle iron (or the amount suggested by the manufacturer), close the lid, and cook until the waffle is golden and crisp, roughly 2 to 4 minutes.
