01Method

  1. 1

Split the leek in half lengthwise and rinse thoroughly under running water, fanning out the layers to flush out any trapped grit. Cut each half down the middle again and slice thinly crosswise.

  2. 2

Place the sliced leek in a pot and pour in just enough water so the pieces float without being submerged. Cover and bring to a boil, then lower the heat and simmer until soft, about 25–30 minutes. Drain off the excess water, return the leek to the pot, and continue cooking uncovered over low heat, stirring now and then, until all remaining moisture has cooked off, about 4–5 minutes.

  3. 3

Tip the cooked leek into a mixing bowl and stir in the bread crumbs, egg, salt, and pepper. Divide the mixture into 4 equal portions and shape each into a round patty roughly 3 inches across using dampened hands.

  4. 4

Pour enough oil into a non-stick frying pan to thinly coat the bottom. Heat over medium-high until the oil begins to shimmer.

  5. 5

Fry the patties for 2–3 minutes on each side until golden. Remove to a plate lined with paper towels to absorb excess oil and serve while warm.
