01Method
- 1
Grate the smoked tofu, peeled carrot, and bok choy. Finely chop the scallions. Peel and finely grate the garlic and ginger.
- 2
Tip everything into a bowl, season with sesame oil, soy sauce, salt, and pepper, and mix well to combine.
- 3
Dip a rice paper wrapper in water for about 5 seconds, or place it between two damp kitchen towels. Spoon a tablespoon of filling onto the moistened wrapper and fold it into a neat square parcel. Wrap the whole thing in a second freshly dampened wrapper. Only dampen the wrappers just before you use them — if they sit too long, they'll become too soggy to work with.
- 4
Heat the peanut or vegetable oil in a frying pan over medium heat. Fry the parcels until golden on each side, about 2 to 3 minutes per side.
- 5
Make the dipping sauce by combining the soy sauce, rice vinegar, and finely chopped chili pepper.
