Turn your oven broiler to its highest setting. Wash the peppers, cut off the tops, and remove the seeds. Broil until the skins are completely charred, then turn and char the other side. Transfer the peppers to a bowl, cover, and let them steam for about 30 minutes.
- 2
Use your fingers to peel away the charred skins, then season the peeled peppers lightly with salt.
- 3
In a large bowl, beat the eggs, then crumble in the cheese and add the chopped herbs and garlic. Mix everything together well, then carefully stuff each pepper with the filling.
- 4
Coat the stuffed peppers first in cornmeal, then in beaten egg, and finally in breadcrumbs. Fry in hot oil, turning to brown all sides, about 5 minutes per side. Serve with a green salad and fresh bread.
