01Method

  1. 1

Roughly chop the onion and add it to a food processor along with the chickpeas. Blend everything together into a thick paste.

  2. 2

The base can be made with chickpeas alone (great for vegans), or you can mix in an egg and a few tablespoons of flour for a firmer texture. Stir in the finely chopped cilantro and parsley, lemon juice, chili, ground cumin, salt, pepper, crushed garlic, and sesame seeds.

  3. 3

With damp hands, shape a test ball and fry it in a good-quality oil. Taste it and adjust the seasoning if needed, then fry the remaining balls.

  4. 4

For the yogurt dip, combine the plain yogurt and sour cream in equal parts, stir in the chopped parsley and garlic to taste, then season with salt and pepper.

  5. 5

Serve the falafel with pita bread, fresh vegetables (lettuce, tomatoes, green onions, cucumber), and the yogurt dip alongside.
