01Method

  1. 1

Whisk the eggs in a large bowl, then stir in the milk, oil, and half the salt. Use an electric mixer to incorporate the flour until a smooth batter forms. Allow the batter to rest for 15 to 30 minutes.

  2. 2

Combine the remaining salt with the cottage cheese, sugar, sour cream, egg yolk, and cinnamon in a separate bowl to create the filling. Stir until evenly mixed.

  3. 3

Heat a small amount of butter in a 6- to 7-inch skillet. Pour in a ladleful of batter and cook until the underside is lightly golden, approximately 3 minutes. Flip out onto a clean tea towel. Continue with the rest of the batter, adding a splash of water if it thickens and re-greasing the pan every few blintzes.

  4. 4

Heat the oven to 400°F (200°C) and lightly grease a baking sheet.

  5. 5

Melt the remaining butter in the skillet over low heat, about 1 minute, and set aside.

  6. 6

Lay a blintz uncooked-side up on a clean surface. Spoon a tablespoon of filling near one edge, then fold and roll to enclose completely. Transfer to the prepared baking sheet. Repeat with all remaining blintzes, then brush each one with the melted butter.

  7. 7

Bake in the preheated oven for 15 to 20 minutes, until the blintzes are nicely browned.
