01Method

  1. 1

Render the bacon in a large skillet over medium heat until browned and crisp. Transfer to paper towels to drain, then break into large pieces or crumbles.

  2. 2

Preheat the waffle iron until very hot. Set the oven to its lowest temperature and place a baking sheet inside to keep finished waffles warm.

  3. 3

Combine the flour, cornmeal, baking powder, baking soda, and salt in a bowl and whisk until evenly mixed.

  4. 4

Separate the eggs into two bowls. Beat the whites with an electric mixer until soft peaks form, then set aside.

  5. 5

In a large bowl, whisk together the egg yolks, mashed sweet potato, buttermilk, and melted butter until smooth. Stir in the dry ingredients until just combined. Gently fold in the beaten egg whites, then mix in most of the scallions, reserving some for garnish.

  6. 6

Lightly grease the waffle iron with oil or cooking spray. Pour in enough batter to fill the mold, lay a few bacon pieces on top, and close the lid. Cook until the waffles are golden and crispy. Repeat with the remaining batter, keeping finished waffles warm in the oven.

  7. 7

In a skillet over low heat, melt the butter and swirl to coat. Crack the eggs into the pan and cover. Cook for about 2 minutes until the whites are nearly set, then remove from heat and let stand covered for about 30 seconds to finish.

  8. 8

Place a fried egg on each waffle, drizzle with honey, and scatter the reserved scallions over the top before serving.
