01Method
- 1
Set up a steamer: line the bottom of the steamer basket with parchment paper pierced with a few holes, then spread the chopped, seasoned vegetables over it.
- 2
Clean the salmon fillets, cut them into portions, and season on both sides with salt and pepper. Place in the steamer and cook for about 10 minutes.
- 3
Meanwhile, boil the potatoes in their skins, then peel and pan-fry them in melted butter until golden. Add the thyme leaves toward the end.
- 4
Peel the avocado, immediately drizzle with lime juice to prevent browning, and slice. Toss with the finely chopped shallot, the prepared tomato, salt, more lime juice, and fresh basil. Mix everything together, transfer to a plate, and top with the potatoes and salmon sprinkled with fresh lemon zest.
