01Method
- 1
Place a cast iron skillet over medium heat, add the steak, and sear for 4 to 5 minutes per side until a thermometer inserted in the center reads 140°F (60°C) for medium doneness. Transfer the steak to a plate and leave the drippings in the skillet.
- 2
Tip the potatoes into the skillet, season with salt and pepper, and cook, stirring now and then, until just tender, about 8 to 12 minutes.
- 3
Add the onion and continue cooking until lightly golden and the potatoes are fully cooked through, about 3 to 5 minutes.
- 4
Cut the steak into bite-sized pieces and return them to the skillet; lower the heat. Create four shallow indentations in the potato mixture, crack one egg into each, scatter the cherry tomatoes around, and cover the pan. Cook until the egg whites are fully set but the yolks remain soft and runny, about 6 to 12 minutes.
- 5
Sprinkle the eggs with salt, pepper, and Italian seasoning before serving straight from the skillet.
