01Method
- 1
Combine 3 tablespoons of olive oil with lemon juice, Italian seasoning, kosher salt, and black pepper in a bowl, then pour into a large resealable bag. Add the pork slices, coat them well, and refrigerate to marinate for 4 to 8 hours.
- 2
In a small bowl, stir together the bread crumbs, Parmesan cheese, garlic, and 1 tablespoon of olive oil until combined.
- 3
Position an oven rack about 5 inches from the broiler element and turn the broiler on to preheat.
- 4
Warm the canola oil in a large heavy oven-safe skillet (such as cast iron) over medium-high heat. Lift the pork out of the marinade and set the marinade aside. Sear the pork pieces until lightly browned but still slightly pink inside, about 2 minutes. Flip the pieces, pour the reserved marinade into the pan, increase the heat to high, and cook for 1 more minute.
- 5
Distribute the crumb mixture evenly over the cutlets and place the skillet under the broiler until the topping is golden and crisp, 1 to 3 minutes. Finish with a garnish of fresh parsley.
