01Method

  1. 1

Place an oven rack about 20 cm below the grill element and preheat the grill.

  2. 2

In a medium non-stick skillet over medium heat, melt the butter. Add the sliced onion, season with some of the salt and pepper, and cook, stirring occasionally, until fully softened, about 15 minutes. While the onion cooks, whisk together the eggs and milk in a bowl with the remaining salt and a little more pepper until well combined. Transfer the cooked onion to a bowl to cool slightly, keeping the skillet for later.

  3. 3

Fold the cooled onion, ham, herbs, and cheese into the egg mixture until evenly combined.

  4. 4

Return the skillet to medium heat and pour in the frittata mixture, spreading the fillings out evenly. Stir gently a couple of times during the first few minutes, then leave undisturbed until the base is set, about 5 minutes. Slide the skillet under the grill and cook until the top is just set and lightly golden, about 5 minutes — take care not to overcook or the eggs will become dry. Remove from the oven, cover loosely, and rest for 5 minutes.

  5. 5

Flip the frittata out onto a large serving plate, slice into wedges, and serve warm or at room temperature.
