01Method
- 1
Mix the corned beef hash together with the onion and bell pepper in an ovenproof skillet. Cook over medium-high heat, stirring occasionally, until the vegetables have softened and the hash has developed a browned crust, about 10 to 15 minutes. Create four wells in the hash mixture, then take the pan off the heat.
- 2
Position the oven rack roughly 6 inches below the broiler element and preheat the broiler.
- 3
Crack one egg into each well and spoon the diced tomatoes with chiles over the top.
- 4
Transfer the skillet to the broiler and cook until the eggs reach your desired doneness, anywhere from 4 to 10 minutes — check frequently to prevent the eggs from burning. Pull the skillet from the oven, scatter the shredded cheese over everything, and finish with a pinch of salt and pepper.
