01Method

  1. 1

Pour the oats into a blender and process on high until a fine flour forms, about 10–15 seconds. Add the milk, water, eggs, melted butter, sugar, and salt, then blend until smooth. Add both flours and continue blending until fully incorporated and lump-free, roughly 20 seconds.

  2. 2

Transfer the batter to the refrigerator and let it rest for 1 hour.

  3. 3

Take the batter out of the refrigerator and give it a quick blend for a few seconds if it has separated.

  4. 4

Warm a 12-inch pan over medium heat and coat it lightly with cooking spray. Pour about 1/4 cup of batter into the pan, then quickly tilt and rotate the pan so the batter spreads into a thin, even layer. Cook until the edges firm up and start to lift from the pan, 1–3 minutes. Flip the crepe with a spatula and cook for another 30 seconds. Transfer to a cooling rack and continue with the remaining batter.
