01Method
- 1
Combine both wheat and spelt flour in a large bowl with the baking powder, baking soda, cinnamon, and salt. Mix thoroughly with a whisk to aerate and distribute the ingredients evenly.
- 2
Whisk together the kefir, eggs, and maple syrup in a separate container. Pour the wet mixture into the dry ingredients and stir just until combined—do not overmix as this will result in dense pancakes rather than fluffy ones. The batter does not require resting time and should be cooked immediately.
- 3
Heat a nonstick skillet over medium heat and add a small amount of butter. Place a few strawberry slices in the pan and let them cook briefly. Pour a small amount of batter over the berries to form a pancake. Cook gently until bubbles form on the surface and the edges appear dry, then carefully flip and cook the other side for approximately 2–3 minutes. Continue until all batter is used. Keep finished pancakes warm in a low oven if needed.
- 4
Serve the pancakes with the remaining sliced strawberries and drizzle generously with maple syrup and melted butter as desired.
