01Method
- 1
Combine all the batter ingredients — eggs, milk, water, melted butter, flour, and salt — in a bowl or blender and mix until completely smooth.
- 2
For the filling, beat the cream cheese together with the powdered sugar, lemon juice, lemon zest, and vanilla extract until smooth and creamy. In a separate bowl, whip the heavy cream to stiff peaks, then gently fold it into the cream cheese mixture.
- 3
Lightly grease a heavy-bottomed nonstick pan with oil and heat over medium heat. Pour in about two tablespoons of batter and immediately swirl the pan to spread it out evenly. Once bubbles start to form on the surface and the edges turn golden, flip the crêpe. Stack the finished crêpes on a plate and cover with a damp kitchen towel to keep them from drying out.
- 4
Spread a layer of the cream cheese filling over each crêpe, arrange the strawberry slices on top, then roll or fold them up. Serve with extra filling and fresh strawberries on top, and garnish with fresh mint or lemon balm leaves if you like.
