01Method
- 1
Heat the oven to 200°C. Arrange the bacon strips on a baking sheet lined with parchment paper and roast until golden and crispy, about 10 minutes. Set aside and keep warm. For a vegetarian version, substitute zucchini slices or omit the bacon entirely.
- 2
Butter four basket molds or heat-resistant bowls about 11 cm in diameter and line each with a square of puff pastry.
- 3
Place a spoonful of caramelized onion onto the pastry in each mold. Season with salt and pepper, then transfer to the baking sheet.
- 4
Crack an egg into each basket and bake in the oven for about 5 minutes until the eggs set. Remove from the oven, top with the bacon strips, and serve with additional caramelized onions.
- 5
For homemade caramelized onions: Heat olive oil in a pan and slowly cook sliced red onions for about 8 minutes. Add brown sugar and balsamic vinegar, stir for another 2 minutes until the sugar dissolves and caramelizes.
