01Method
- 1
Heat the oven to 400°F.
- 2
Place 1 tablespoon of butter into a 10-inch cast iron skillet and transfer it to the hot oven to preheat for 10 minutes.
- 3
Meanwhile, melt the remaining butter in a microwave-safe bowl in 30-second intervals until fully liquid. Set aside to cool briefly.
- 4
When about 5 minutes remain on the preheat timer, add the milk, flour, eggs, sugar, melted butter, vanilla, cinnamon, salt, and nutmeg (if using) to a blender. Blend on medium speed for 1 to 2 minutes until the batter is smooth and airy with small bubbles throughout.
- 5
Pull out the oven rack carefully and pour the batter directly into the center of the hot skillet. Slide the rack back in, close the oven, and bake for 20 to 25 minutes until the center is puffed and the edges are golden and crisp. Serve immediately from the pan with toppings of your choice. Store any leftovers sliced in an airtight container in the refrigerator for up to 3 days; reheat on a baking sheet at 350°F for about 5 minutes until warmed through and crisp.
