01Method
- 1
Set the oven to 400°F (200°C) to preheat.
- 2
Warm the applesauce in a small saucepan over medium heat until hot but not boiling. Transfer to a blender, add the eggs, and blend for about 5 seconds. Add the vanilla, sugar, salt, and flour, blend until smooth. Pour in two tablespoons of the melted butter and blend for another 30 seconds.
- 3
Place an oven-safe skillet over medium heat. Coat the bottom and sides with a tablespoon of melted butter, then immediately pour in the batter and transfer the skillet to the middle rack of the oven.
- 4
Bake until the edges are golden and the pancake has puffed up, approximately 20 minutes.
- 5
Brush the remaining tablespoon of melted butter over the surface of the pancake, then dust with confectioners' sugar if desired.
- 6
Combine the flour, granulated sugar, and cinnamon in a small bowl, then cut in the butter until the mixture forms coarse crumbs. Scatter evenly over the Dutch Baby and serve right away.
