01Method

  1. 1

Coat six muffin cups thoroughly with cooking spray.

  2. 2

In a mixing bowl, combine the banana, honey, and almond extract, stirring until the mixture is uniform and smooth.

  3. 3

In a separate bowl, mix together the oats, cinnamon, and salt, then fold this into the banana mixture until everything is evenly coated. Press the mixture firmly into the bottom and up the sides of each prepared muffin cup. Chill in the refrigerator until solid and cold, 1 to 2 hours.

  4. 4

Heat the oven to 350°F (175°C).

  5. 5

Take the muffin tin out of the refrigerator and re-press the oat mixture firmly into the base and walls of each cup.

  6. 6

Bake until the cups are set and smell fragrant, 10 to 12 minutes.

  7. 7

Remove from the oven and use the back of a spoon to press the sides back in while still warm. Allow to cool for 20 minutes, then carefully lift the cups out of the tin.

  8. 8

Fill each granola cup with yogurt and serve.
