01Method

  1. 1

Melt the butter in a bowl by microwaving on full power for about 30 seconds. Stir in the lemon zest and set aside to cool.

  2. 2

In a mixing bowl, whisk together the egg yolks, crème fraiche, sugar, cooled butter, and milk. Sift in the flour and mix briefly until mostly smooth — a few small lumps are fine.

  3. 3

In a separate bowl, whisk the egg whites to stiff peaks, then carefully fold them into the batter in two additions using a metal spoon.

  4. 4

Lightly grease a pan with butter over medium-low heat and wait until it begins to foam. Drop portions of batter onto the pan using an ice cream scoop, leaving space between each pancake.

  5. 5

Cook until bubbles form and cover the entire surface, then flip each pancake and cook the other side for about a minute or until golden brown.

  6. 6

Serve the pancakes with the sugared berries on top, and add a drizzle of golden syrup for extra sweetness if desired.
