01Method

  1. 1

Heat olive oil in the inner liner of an electric pressure cooker using the Sauté function. Add the ground beef and onion, cooking until the meat is fully browned and no pink remains, about 5 minutes. Remove from the pot and drain excess fat.

  2. 2

Return the beef and onion mixture to the pot, keeping it on Sauté mode. Mix in the water, tomato paste, and taco seasoning. Let the mixture come to a simmer and cook until it thickens, 8 to 10 minutes. Spoon the filling into the hollowed bell peppers.

  3. 3

Add 1 cup of water to the inner liner, place the trivet inside, and set the stuffed peppers on the trivet. Seal the lid securely. Set the cooker to high pressure and program it for 8 minutes, allowing 10 to 15 minutes for pressure to build.

  4. 4

Use the quick-release method to carefully release the pressure, about 5 minutes. Remove the lid and serve.
