01Method
- 1
Prepare the blue cheese dip: Combine Greek yogurt, mayonnaise, crumbled blue cheese, a pinch of black pepper, and a dash of hot sauce in a medium bowl. Stir well and refrigerate until ready to serve.
- 2
Break the cauliflower head down into florets, aiming for uniform pieces no larger than about 1½ inches across.
- 3
Place the florets in a bowl and toss with salt, chili powder, and garlic powder. In a separate bowl, whisk together the eggs and water. Pour the egg mixture over the seasoned cauliflower and turn to coat evenly. Transfer the coated florets to a bowl of breadcrumbs and press to adhere well.
- 4
Lightly coat the air fryer basket with nonstick spray. Arrange a single layer of breaded florets in the basket and cook at 350°F for 7 minutes. Flip each floret and continue cooking for another 7 minutes. Work in batches until all the cauliflower is cooked through and crispy.
- 5
Serve immediately straight from the fryer, either all at once or batch by batch as they finish. Accompany with the blue cheese dip.
