01Method
- 1
Gather all ingredients and have them ready before starting.
- 2
In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt, whisking until evenly mixed.
- 3
In a separate bowl, beat together the buttermilk, eggs, and 3 tablespoons of the oil until thoroughly blended.
- 4
Add the wet mixture to the dry ingredients and fold together until just incorporated — the batter will be somewhat thick.
- 5
Warm the remaining tablespoon of oil in a cast iron skillet over medium-low heat for 5 minutes. In batches, ladle about ⅓ cup of batter per pancake into the pan.
- 6
Using the back of a spoon, gently spread each portion into a round; cook until the underside is golden and bubbles form across the surface, about 1½ to 2 minutes.
- 7
Turn each pancake over and continue cooking until the centre is set and the second side is browned, roughly 2 more minutes.
