01Method
- 1
Heat the oven to 400°F (200°C).
- 2
Combine zucchini, shallots, and garlic in a bowl with most of the olive oil; season with red pepper flakes, salt, and black pepper, then spread the mixture onto a rimmed baking sheet.
- 3
Roast in the oven, turning the vegetables occasionally, until they are soft and lightly browned, about 30 minutes.
- 4
While the vegetables roast, bring a large pot of salted water to a boil. Cook the ziti until al dente, 9 to 12 minutes. Drain the pasta, setting aside some of the cooking water.
- 5
Drizzle the drained ziti with a little olive oil and transfer to a large pot. Stir in the roasted vegetables, a splash of reserved pasta water, and the remaining olive oil; heat over medium, stirring, until everything is warmed through. Fold in most of the basil and the Parmesan, adding more pasta water as needed if the dish seems dry. Adjust seasoning with salt and pepper, then scatter the remaining basil over the top.
