01Method

  1. 1

Preheat the oven to 200 °C (gas mark 6). Place the chicken thighs in a medium roasting dish, season well, and lay the bacon slices over the top. Add the thyme if using. Roast in the oven for 20 minutes.

  2. 2

After 20 minutes, add the cubed bread to the roasting dish, drizzle with oil, and roast for a further 20 minutes until the croutons and bacon are crispy and the chicken is cooked through.

  3. 3

Dressing: Put all the dressing ingredients into a bowl and whisk together until smooth.

  4. 4

Cook the noodles in salted boiling water according to the package instructions, about 4–5 minutes, then drain.

  5. 5

Remove the skin from the roasted chicken and cut the meat into bite-sized pieces. Toss them through the dressing.

  6. 6

Arrange the romaine lettuce leaves on plates, top with the hot noodles, spoon over the chicken and dressing, and finish with the croutons and bacon. Scatter over the grated Parmesan, a good grind of black pepper, and a few sprigs of thyme if you like.
