01Method
- 1
In a heavy skillet over medium heat, melt the butter. Add the diced onion and cook, stirring, until lightly golden, about 5 minutes. Season with salt and pepper.
- 2
Add the ground turkey along with the cold water to the onions. Cook, breaking the meat apart as it browns, about 2 minutes. Stir in the ketchup, brown sugar, cayenne pepper, and additional salt and pepper. Continue cooking until the liquid reduces, about 5 minutes.
- 3
Stir in the Worcestershire sauce and cocoa powder. Cook, stirring often, until the meat is fully cooked and the sauce is thick and reduced, 20 to 30 minutes, adding water as needed to maintain consistency.
- 4
Position the oven rack about 6 inches from the heat source and switch the oven to broil.
- 5
Place the buns cut-side up under the broiler and toast until golden brown, 2 to 3 minutes.
- 6
Take the turkey mixture off the heat and fold in the cheese and green onions. Spoon onto the toasted buns and serve immediately.
