01Method

  1. 1

Prepare the vegetables: Using a food processor, pulse the carrot, onion, celery, green pepper, and garlic until finely minced. If you don't have a food processor, chop them very finely by hand — no large chunks should remain. The vegetables can be prepped ahead and stored in a covered container in the refrigerator.

  2. 2

Soften the vegetables: Heat olive oil in a medium or large saucepan over medium heat. Add the minced vegetables and cook for 4 to 5 minutes until tender but not browned. Season with salt and black pepper.

  3. 3

Cook the turkey: Add the ground turkey to the pan. Break it up continuously with a spoon and cook for 5 to 6 minutes until fully cooked through.

  4. 4

Build the sauce: Stir in the ketchup, tomato sauce, Worcestershire sauce, red wine vinegar, and brown sugar. Bring the mixture to a simmer, then reduce the heat to low. Simmer for 6 to 8 minutes, stirring occasionally, until the mixture thickens. If it still appears too loose, continue simmering for another 5 minutes. Adjust seasoning to taste.

  5. 5

Serve: Spoon the mixture generously onto hamburger buns and serve alongside coleslaw. Offer kettle potato chips and pickled jalapeños on the side if desired.
