01Method
- 1
Using a mandolin or a sharp knife, cut the papaya and carrots into thin julienne strips and place them in a large mixing bowl.
- 2
Combine the chillies, ginger, lemongrass, and garlic in a pestle and mortar and grind into a paste. Zest the limes and add the zest to the mortar. Cut the beans into bite-sized pieces, add them in, and lightly bruise. Stir in the spring onions, sesame oil, Pad Thai sauce, rice wine vinegar, soy sauce, fish sauce, and the juice from the limes.
- 3
Pour the mortar mixture over the papaya, carrots, and cherry tomatoes and toss to combine.
- 4
Fold in the coriander and mint leaves, then transfer to a serving dish and scatter the roasted peanuts on top.
- 5
Thread the cubed chicken onto skewers and cook on a griddle or barbecue until fully cooked through with a good char.
- 6
Thread the prawns onto separate skewers and griddle until just cooked through.
