01Method

  1. 1

Peel the zucchini and grate it coarsely. Salt it lightly, place in a colander, and allow excess moisture to drain. Grate the edam and ham coarsely and set aside.

  2. 2

Prepare the stale rolls by cutting them into small cubes. In a bowl, combine the flour with the baking powder and bread cubes.

  3. 3

In another bowl, whisk together the oil with the egg yolks and gradually blend with the flour mixture. Season with salt and add the marjoram, finely diced onion (optionally sauté briefly in a little oil first for better digestibility), and pressed garlic. Fold in the prepared edam and ham. Squeeze the zucchini by hand to remove excess moisture, then incorporate it into the batter. Finally, fold in the stiffly beaten egg whites.

  4. 4

Grease a baking sheet (optionally line with parchment paper for easier handling) and transfer the batter onto it. Bake at 180°C for approximately 40 minutes until the top is golden brown and crispy.
