01Method

  1. 1

Combine the flour, cheese, salt, butter, and egg and quickly work everything together into a smooth dough. Wrap in plastic wrap and let it rest in the fridge for at least 30 minutes. Preheat the oven to 180 °C and grease your tart pan with butter.

  2. 2

Peel and finely chop the shallots, then roughly chop the cleaned mushrooms. Heat the oil and butter together in a skillet over medium-high heat, add the mushrooms, and sauté. Stir in the shallots and bacon and cook everything together. If you're using chanterelles, add them at this stage. Cook for about 10 minutes total, then season with salt and pepper and set aside.

  3. 3

Roll out the rested dough on a lightly floured surface and press it into the prepared tart pan. Prick the base all over with a fork and blind bake in the oven for about 20 minutes. Meanwhile, whisk together the sour cream, eggs, and cheese, then season with salt and pepper.

  4. 4

Carefully remove the pre-baked crust from the oven, spread the mushroom mixture evenly over the base, and pour the cream custard over the top. Return the tart to the oven and bake for another 20 minutes. Best served warm.
