01Method
- 1
Combine the chicken pieces in a bowl with the cornstarch, salt, and white pepper, tossing until every piece is well coated. Set aside.
- 2
Warm a small nonstick skillet over medium heat with a little oil. Cook the garlic and ginger, stirring constantly, until aromatic, about 1 minute.
- 3
Add the soy sauce, hoisin sauce, rice vinegar, sambal oelek, and sesame oil to the skillet. Bring the mixture to a boil, stir for about 1 minute, then remove from heat and reserve.
- 4
In a large nonstick skillet or wok, heat a portion of the cooking oil over medium-high heat until very hot. Carefully add the coated chicken pieces and cook, stirring frequently with a long-handled utensil to avoid spattering, until lightly browned all over, 8 to 10 minutes.
- 5
Transfer the chicken to a plate using a slotted spoon. Pour the remaining cooking oil into the same pan, then add the carrots, shallots, and broccoli. Stir-fry continuously for 3 to 4 minutes.
- 6
Pour in the reserved sauce and continue cooking, stirring, until the vegetables reach your preferred tenderness, 2 to 3 minutes.
- 7
In a small bowl, dissolve the cornstarch in the soy sauce, stirring until completely smooth. Pour the slurry into the pan and stir vigorously to incorporate. Return the chicken to the pan and cook, stirring often, until everything is heated through, 2 to 3 minutes.
- 8
Take the pan off the heat, scatter sesame seeds over the top, and serve immediately.
