01Method

  1. 1

Skin and debone the salmon, then cut it into small pieces roughly ¼ inch in size. Transfer about a quarter of the pieces to a food processor, leaving the rest in a large bowl.

  2. 2

Add the mustard, mayonnaise, and lemon juice to the food processor and pulse until the mixture becomes a thick paste. Scrape this paste into the bowl with the remaining salmon. Stir in the bread crumbs, scallions, and chili flakes until everything is evenly incorporated.

  3. 3

Shape the salmon mixture into 4 equal patties. Arrange them on a baking sheet, season with salt and pepper, and freeze for 1 hour to firm up.

  4. 4

Heat the air fryer to 400°F (200°C) and coat the basket with nonstick spray.

  5. 5

Set the patties in the basket and lightly spray the tops. Cook for 8 minutes, spray the tops once more, then continue cooking for an additional 5 minutes.
