01Method
- 1
Heat the oven to 425°F (220°C).
- 2
In a large bowl, mix together the ground chicken, bread crumbs, and onion soup mix until combined.
- 3
Process the roughly chopped bacon in a food processor with 10–12 pulses, scraping down the sides as needed. Fold the processed bacon into the chicken mixture, shape into 6 equal patties, arrange on a baking sheet, and chill in the freezer for 12 minutes.
- 4
Transfer the baking sheet to the oven and bake for 8 minutes. Lower the temperature to 350°F (175°C) and continue baking until the patties are golden, cooked through, and an instant-read thermometer inserted in the center registers at least 165°F (74°C), about 12 minutes more.
- 5
While the patties finish cooking, warm a sauté pan over medium heat. Melt the butter, then add the sliced onion and mushrooms. Cook until softened, about 5 minutes, and season with salt and pepper.
- 6
To assemble, place a chicken patty on each toasted croissant half, then layer with Swiss cheese, the cooked bacon pieces, and the onion-mushroom mixture. Serve right away.
