Blitz the cracklings in a food processor or run them through a meat grinder. Transfer to a large bowl, stir in the egg yolks and a pinch of salt, and mix everything together thoroughly with a wooden spoon. Sift both flours directly into the bowl, crumble in the fresh yeast, and pour in the warm milk. Stir with the wooden spoon until you have a smooth, non-sticky dough, then cover the bowl with a clean kitchen towel and leave to rise in a warm spot for 1 hour.
- 2
Turn the risen dough out onto a lightly floured surface and roll it out to a thickness of about 1 cm. Cut out rounds using a glass or a round cutter and arrange them on a baking sheet lined with parchment paper.
- 3
Brush each round with egg white and sprinkle with your choice of poppy seeds, caraway seeds, sesame seeds, or coarse salt. Using a sharp knife, score a crosshatch pattern across the surface, cutting about 2 mm deep. Bake in a preheated oven for approximately 20 minutes, until golden brown.
- 4
Serve the biscuits as a side with goulash, alongside cottage cheese, or simply as a snack with beer or wine.

Tip: For extra flavor, fold three spring onions, thinly sliced, into the dough.
