01Method

  1. 1

Twist the heads off the shrimp and remove the shells, leaving the tails intact. Set the heads and shells aside. Slit each shrimp along the back and remove the dark vein, then rinse and pat dry with paper towels.

  2. 2

Cook the pasta in salted water following package directions. Drain, reserving a cup of the cooking water.

  3. 3

While the pasta cooks, warm the olive oil in a deep pan over medium heat and gently fry the shrimp heads and shells for 5 minutes. Remove them from the pan, leaving as much oil behind as possible.

  4. 4

Add the sliced garlic and chilli flakes to the oil and cook gently until fragrant without browning. Place the cleaned shrimp with a pinch of salt in the pan and cook until pink. Pour in enough pasta water to create a light sauce and stir to combine. Fold in the parsley and serve.
