Slice 4 half-inch thick rounds from the center of the onion, setting the smaller end pieces aside. Divide the beef into 4 equal portions and press each into a very thin patty. Season both sides with salt and pepper.

Place a large skillet over medium-high heat. Working two at a time, lay 2 onion rounds in the pan and let them cook undisturbed for about 2 minutes. Lay 2 patties alongside and cook until a golden crust forms, 2 to 3 minutes. Flip both the onion rounds and the patties, pressing the burgers down as they continue browning.
- 3
Drape 2 cheese slices over one onion round and a slice on each patty. Stack one patty onto the cheese-covered onion round, then place the second patty on top. Crown with the remaining onion round and press firmly. Flip the assembled stack and cook for another 1 to 2 minutes. Transfer to a plate and repeat the process with the remaining onion rounds, patties, and cheese.

Whisk together the mayo, ketchup, mustard, and pickle relish in a small bowl until smooth. Spoon alongside the assembled burgers for dipping or drizzling.
