01Method

  1. 1

Preheat the oven to 350°F (175°C). Grease and flour an 8-inch baking pan and set aside.

  2. 2

Using an electric mixer, cream the butter with half the sugar until light and fluffy. Mix in the vanilla and salt, then add the egg yolks and beat until smooth.

  3. 3

Whisk together the flour and baking powder in a separate bowl. Add to the creamed mixture in alternating additions with the milk, beginning and ending with the flour mixture.

  4. 4

Toss the blueberries with the tablespoon of flour until coated, then gently fold them into the batter.

  5. 5

In a clean bowl, whisk the egg whites to soft peaks. Gradually add the remaining sugar, one tablespoon at a time, continuing to beat until stiff peaks form. Carefully fold the meringue into the cake batter in two or three additions.

  6. 6

Transfer the batter to the prepared pan and smooth the top. Scatter the remaining tablespoon of sugar evenly over the surface.

  7. 7

Bake for approximately 50 minutes, or until a toothpick inserted into the center comes out clean.

  8. 8

Allow to cool slightly before serving.
