01Method
- 1
Activate the Saute function on a pressure cooker. Once heated, melt the butter and add both bell peppers and the onion. Stir and cook until vegetables are tender and aromatic, about 5 minutes.
- 2
While vegetables cook, slice each chicken breast into two thin horizontal fillets, then cut diagonally into strips. Coat the strips with half the jerk seasoning, add to the pot, and cook for 5 minutes. Turn off the Saute function. Stir in the penne, water, whipping cream, and garlic base.
- 3
Seal the lid and set the cooker to high pressure following the manufacturer's directions; cook for 15 minutes. Allow 10 to 15 minutes for pressure to build before the timer starts.
- 4
Use the quick-release valve to carefully depressurize the cooker, about 5 minutes. Open the lid and stir in the remaining jerk seasoning and the Parmesan cheese until fully incorporated. For a creamier consistency, add a splash more cream as desired.
