01Method
- 1
Place potatoes in their skins into boiling water in one pot, and bring pasta to a boil in another pot.
- 2
Once potatoes are tender, drain them and peel away the skins after cooling slightly. Drain the pasta as well and rinse it under cold water.
- 3
Dice the onion finely and heat a deep skillet or large pot. Add the fat once hot.
- 4
Immediately stir in the diced onion and cook until it turns golden brown.
- 5
Sprinkle in the ground caraway and continue cooking, then cut the bacon into small pieces.
- 6
When the onion is lightly golden, add the bacon pieces and keep stirring.
- 7
Once done, add the ground paprika and stir-fry briefly for about half a minute, being careful not to scorch it as it becomes bitter.
- 8
Mix the pasta and diced potatoes into the onion and bacon mixture, stirring thoroughly to combine.
- 9
Season with pepper to taste and garnish generously with fresh parsley before serving.
