01Method
- 1
Heat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- 2
In a large bowl, combine the flour, sugar, baking powder, salt, and baking soda by whisking. Using a knife, work the butter into the dry mixture until it resembles coarse crumbs.
- 3
Set the bowl in the freezer for 5 minutes to keep the butter cold.
- 4
Mix in the Greek yogurt until a dough begins to form. Pour in the seltzer and stir until the dough is smooth and cohesive; if it seems dry, add a little more seltzer.
- 5
Turn the dough out onto a lightly floured sheet of parchment and press it into a flat rectangle. Fold the rectangle into thirds, rotate 90 degrees, collect any loose crumbs, and press flat again. Repeat this fold-rotate-flatten sequence two more times.
- 6
Press the dough to about ½-inch thickness and cut out twelve 2½-inch rounds. Arrange them on the prepared baking sheet.
- 7
Bake until the biscuits are golden brown, 10 to 15 minutes.
