01Method
- 1
Beat eggs with salt and pepper in a bowl until the mixture is frothy. In a large skillet over medium-low heat, melt the butter, then pour in the egg mixture. Stir gently with a spatula until the eggs are just set, 3 to 6 minutes, then take off the heat.
- 2
Slice the rolls horizontally as a whole slab and place the bottoms in a 9x13-inch baking dish. Layer provolone cheese, then the scrambled eggs, then ham, then another layer of provolone, ham, and a final layer of provolone. Place the roll tops over the filling, then cut down through the layers to separate into individual sliders.
- 3
In a small saucepan over medium heat, combine the butter, brown sugar, and mustard. Stir until the sugar is fully dissolved, then brush the glaze evenly over the roll tops. Cover the dish with foil and allow it to rest for about 30 minutes.
- 4
Heat the oven to 350°F (175°C) and remove the foil from the baking dish.
- 5
Bake until the tops are golden and the cheese is fully melted, 15 to 20 minutes.
